photo recipe. basically, a variety of clarified butter primarily used in
indian cuisine.
I use to prepare butter from by churning the
accumulated cream. i use to boil full cream milk daily before consumption and
collect all the milk cream.
once u collected butter from milk cream put in to mixer jar to avoid buttermilk extract. once butter in thick, remove from mixer jar pour into heated pan. continuously stir the melted
butter while heating. otherwise it may stick to the bottom of the pan.
furthermore, do not use wet spoon to scoop the ghee. for longer shelf life,
moisture must be avoided. lastly, if you need yellow coloured ghee use butter
prepared from cows milk. for white coloured ghee, use butter prepared from
buffalo’s milk.

Instructions:
- firstly, take the butter into the heavy bottomed pan and melt on medium flame.
- keep stirring till the butter melts completely.
- furthermore, the butter will turn yellow in colour and white foam will start to form on the surface.
- after 5-7 minutes the foam will slightly start to vanish and bubbles will increase. continue to boil on medium flame scrapping the sides to remove residues.
- keep stirring in between till crystal clear bubbles are formed. here the ghee is prepared.
- also, the butter has turned to golden clear colour. turn off the flame and allow to cool to room temperature.
- after its cooled, milk residues settles at the bottom.
- now with the help of sieve, slowly sieve the ghee into the jar separating milk residues.
- finally, once the ghee has cooled completely, store in a airtight jar and use as required.
- the ghee turns to slightly yellowish solid once cooled completely.

7. finally, once the ghee has cooled completely, store in a airtight jar and use as require. ghee turns to slightly yellowish solid once cooled completely
POINTS TO REMEMBER:
- firstly, use unsalted butter to avoid salty ghee.
- furthermore, prepare ghee on medium flame to avoid burning of ghee.
- additionally, keep stirring till crystal clear golden liquid is formed. few butter needs more time as it depends on amount of water content present in butter.
- finally, store ghee in airtight container. ghee stays fresh months together, just do not get in touch with moisture.
