Diwali sweets
Adhirasam / ariselu is a traditional south indian sweet
prepared on Diwali festival. Its derived from tamil cuisine.People use adhirasam as offferings for gods
during pooja prayers.only 3 ingredients needed as raw rice and jaggery , oil but making is a bit and tricky. need patience and atmost concentration to get jaggery syrup consistency right.
Ingredients
- Jaggery ( vellam ) -1/2 kg
- Rice ( pacharisi) – 1kg
- water - 1/2 cup
- Cooking oil for deep fry
Instruction
1. Wash rice and soak for 3hrs. drain and spread over a cotton
cloth .
Let the rice dry for about 15mins. Do not let the rice sit
for too long this will lead to the adhirasam becoming rubbery. There should be
little moisture.
2. Grind the rice into machine store or mixer should not be
fine . if its too coarse sieve it .
3. Meanwhile, grind the jaggery into powder and heat while
fully immersing in water.
Remove impurities once by filtering it. heat should be at
medium flame .
jaggery Syrup will dissolve when you pour water into it. You will be
able to use your finger to gather it form a loose ball known as soft ball
consistency. Turn off the flame.
now all ingredients ready to prepare adhirasam. now move on to dough making.
DOUGH MAKING FOR ADHIRASAM :
1. Pour the rice flour gradually into jaggery syrup use ladle
or spatula mix well. Both ingredients gets mix well. The dough become very
loosely and gooey. It start absorbing
and become stiff.
Leave it for 2days in an airtight container at room
temperature.
2, After roll into balls of equal sizes [ like lemon size].
3. Heat oil in a kadai until very hot and then lower the flame.
4. Apply oil in a backside of plate flatten the dough.
5. Carefully drop the dough in oil the flip it and let cook as soon as it rises
until it turns into a golden brown.
Repeat this process for
the remaining dough.
now tasty adhirasam gets ready.
