Vegetables kurma traditional
recipes with step by step pictures. Very common term used not just in india but
most of sub-continent countries. By way of kurma recipes gets different from
the world . cuisine made of both north and south indian style. In south indian
style made with grounded coconut spicy masala to be added and serve with
chappathi, parotta. Both are made with the choice of vegetables. Both are like
green colour texture if added red chilli with coconut paste then it spicy red
colour gravy. In north indian not added coconut paste to gravy. Curry can be
made with any type of vegetables choice is ours wish.

ingredients:
For masala paste:
1 cup of coconut, grated
10 to 15 garlic
6 red chilli
4 cloves
2 cinnamom
¼ fennel seeds
For gravy:
Beans
Carrot
Potato
nookal [ kohl rabi]
¼ tsp mustard seeds
½ tsp gram dal
½tsp orid dal
15 small onion chopped
Tomato 2
2 springs of curry leaves
Salt as per required
½ tsp turmeric powder
1 tsp of chili powder
1 tsp of garam masala
Instructions
1. Take a large kadai heat it add 4tsp of oil and sauté ¼ tsp of mustard seeds, ½
tsp of gram dhal, ½ tsp of orid dhal.
2. Add 15 small chopped onion and sauté well
3. Further add 2springs of curry leaves and 2 tomato sauté until soft and mushy.
4. Now add 3 carrot, 10 beans, 3nookal [ kohl rabi], 2 potato
5. Sauté for 5minutes add ½ tsp of turmeric powder, 1 tsp of
chilli powder, 1 tsp of garam masala, salt as per required.
6. Add grinded coconut masala paste to it stir well.
7. Add ½ cup of water mix
well in it. Note Adjust the water consistency as per gravy contained in it .
8. Cover the kadai with lid for 10minutes or vegetable till
gets boiled.
9. Finally veg kurma served with chappathi, rice , dosa.
