Vendakkai sambar south indian style . best sambar for
idli,dosa and rice . ladiesfinger vegetable is disike for all due to sticky. But
once roasted the ladiesfinger from empty
pan for 3min stickiness is not there. Try
this sambar with step wise pictures taste it well.

Ingredients [serve for 8 people]
- Toor dhal in tamil tuvara paruppu 150gm
- Tamrind pulp
- 1teaspoons of castor oil
- 3teapoons of oil
- ¼ teaspoons of mustard seeds
- ½ teaspoons of urad dhal
- ½ teaspoons of gram dhal
- 1 red chilli
- 3springs of curry leaves
- 6-7 ladiesfinger chopped
- 15 small onion
- 2teaspoons of chilli powder
- Salt as per required
- 1teaspoons of turmeric powder
- 1tomato
Instructions
Making of toor dhal or tuvara paruppu
Take a pressure pan 150 gm of toor dal wahed rinse well. Add water
according to toor dal gets settled then add 1teaspoons of turmeric powder, 1teaspoons
of castor oil . close pressure pan leave for 1 whistle and rest it cool down
pressure.once dal or paruppu gets boiled
check it and transfer to bowl.
Prepare tamarind pulp
Take a tamarind soak in water for 20mins.
After squeeze the soaked tamarind pulp. Filter it and keep it in bowl.
Preparartion of vedakkai sambar
1.Take a pan stir and sauté ladiesfinger for 3min transfer to
plate.
2. After with the same pan add 3teaspoons of oil, mustard seeds,urad
dal,gram dal,red chilli.
3.Add small onion and curry leaves till gets fried and roasted.
4. Add fried ladiesfinger.
5. Add 1 tomato squeeze it and add 1cup of water for vegetables
gets boiled.
6. Add mashed toor dal lentils and add 2tsp red chilli powder,
salt as required and mix well on it.
7. Add tamarind pulp on it.
8. Close with lid boil for 10 to 12minutes or till the sambar
has become tender.once it gets thick off the flame and serve with
rice,idli,dosa.
