Avarakkai  Poriyal is a preparation where vegetable are sauté in spices and topped with fresh grated coconut. The  ingredients need are chopped avarakkai or broad beans, grated coconut, turmeric, chilli powder, onion, salt and water. Mainly serve broad beans poriyal for rasam, sambar and curd rice. I recommended to choose avarakkai  as young as the older ones are difficult to cook not boil easily.

Few instruction which helpful for beginners. Avarakkai soak in water to get rid of dirt. Then need to remove strings are very fibrous but not pleasant to eat. First remove tip of one end of the bean with a pairing knife and pull the string . Remove other end of the strings too. Note that the tender young bean might not have strings so remove the ends alone.  Chopped avarakkai as small pieces.  Avarakkai poriyal recipe with step by step photos.

Ingredients


  • 2 tablespoons of gingelly oil
  • ¼ tsp of mustard seeds
  • ¼ tsp of gram dhal
  • ¼ tsp of urad dal
  • 1 large onion finely chopped
  • 1cup of boiled avarakkai
  • Salt as per required
  • ½ tsp of turmeric powder
  • 1tsp of chilli powder
  • 4tablesppons of grated coconut
  • Water 1/4 cup or as per required.

Instruction:

1. Add the chopped avarakkai directly into the pressure cooker. add salt and 1/2 cup of water. pressure cook in medium flame for 1 to 2 whistles. wait for untill the pressure gets released and kept aside.



 

2. Now do the seasoning. heat a pan add 2 tablespoons of oil if its gets hot add 1/4 tsp of mustard seeds, 1/4 tsp of gram dal, 1/4 tsp of urad dal untill gets splutter.  

 

3. Add large onion and saute well.

 

4. pour the boiled avarakkai with water consistency also and mix well.

 

5. add 1tsp of chilli powder.

 

6. add 1/2 tsp of tumeric powder.

 

7. add 4tabelspoons of grated coconut mix well in it.

 

8. close with lid for 5minutes untill raw smell goes out. wait till the water gets evaporates.


 

9. once avarakkai gets ready turn off the flame.

 

10. serve avarakkai poriyal hot with sambar, rasam and curd rice.
